Ingredients:
For the Banana Bread:
- 3 ripe bananas, mashed
- 2 eggs
- 1/4 cup almond milk (or milk of choice)
- 1 1/2 cups whole wheat flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup honey or maple syrup (or coconut sugar)
For the Crumble Top:
- 1/4 cup rolled oats
- 2 tbsp coconut oil (or butter)
- 1 tbsp brown sugar (or maple syrup)
- 1/4 tsp cinnamon
For the Icing Drizzle:
- 2 tbsp Greek yogurt (or coconut yogurt)
- 1 tbsp maple syrup
Instructions:
1. Preheat and Prepare the Pan:
Preheat your oven to 350°F. Grease a loaf pan or line it with parchment paper.
2. Make the Banana Bread:
In a large bowl, mash the ripe bananas. Stir in the eggs, almond milk, and honey (or maple syrup). Mix well.
In another bowl, combine the flour, baking powder, and cinnamon. Add the dry ingredients to the wet ingredients and stir until just combined.
Pour the batter into the prepared loaf pan.
3. Prepare the Crumble Topping:
In a small bowl, mix the rolled oats, coconut oil (or butter), brown sugar (or maple syrup), and cinnamon until combined. Sprinkle the crumble evenly over the top of the batter.
4. Bake the Banana Bread:
Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
5. Make the Icing Drizzle:
While the bread cools, mix the Greek yogurt (or coconut yogurt) with maple syrup in a small bowl until smooth. If the drizzle is too thick add some milk or more maple syrup until your ideal consistency.
6. Cool and Drizzle:
Allow the banana bread to cool in the pan for about 10 minutes, then transfer it to a wire rack. Once fully cooled, drizzle the icing over the bread.
