Protein Cookie Dough Date Bars

Ingredients:

  • 1 cup cottage cheese
  • 1 tablespoon Maple Syrup
  • 1 scoop vanilla protein powder
  • 2/3 cup almond flour
  • 1 tsp vanilla extract
  • Dark chocolate chips
  • Dark chocolate, melted
  • Dates (I used 12 dates)

Directions:

  1. In a blender add cottage cheese, maple syrup, protein powder, almond flour, and vanilla extract. Blend until well combined.
  2. In a bowl, add chocolate chips to cookie dough mixture and stir.
  3. In a dish open dates and either using your hands or a rolling pin, flatten dates until they become one. Spoon cookie dough mixture on top.
  4. Drizzle melted chocolate and set in the fridge to cool.
  5. Cut into desired bar sizes and enjoy!
