Spicy Salmon with Pickled Cucumbers

Ingredients:

  • 4 Salmon fillets
  • 4 tablespoons spicy mustard
  • salt
  • pepper
  • paprika
  • garlic powder
  • 3-4 tablespoons siracha
  • 1 cup nonfat plain Greek yogurt (you can use mayo if you prefer!)
  • juice of 1 lime
  • scallions, sliced
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce
  • 2 tablespoons sugar
  • red pepper flakes
  • 1 large cucumbers, sliced
  • 1/2 red onion, sliced

Directions:

  1. In a bowl mix together cucumbers, onion, vinegar, soy sauce, sugar, and red pepper flakes. Cover and let sit in the fridge for 20-30 minutes.
  2. Spread mustard on salmon fillets and season with your seasonings. Air fry for 15-20 minutes at 400 or until fully cooked.
  3. While salmon is cooking mix together yogurt, sriracha and lime juice.
  4. Once salmon is cooked plate your meal and top with you sriracha sauce and scallions.
