Chicken is one of the most popular meats to cook with. However, a lot of people don’t cook whole chickens at home. It seems harder than it is. I prefer to cook a whole chicken because you can use left overs for so many things! I used the leftovers from this recipe to make a chicken salad sandwich and I also added it to a salad. This recipe is so delicious. The skin is perfectly crispy and the meat is so tender form the butter and herbs! So, try out this recipe and you’ll see how easy it really is!
Ingredients:
- (1) 2-3 pound Whole Bone-in Chicken
- 6 sprigs Fresh Thyme
- 5 sprigs Fresh Rosemary
- 3 tablespoons dried Italian seasoning
- 1/2 stick of butter (room temp)
- 3 cloves of garlic (1 chopped)
- 1 Lemon and the zest of a 1 Lemon
- Salt & Pepper to taste
Directions:
- Preheat oven to 400 degrees. Line a roasting pan with aluminum foil, or line a baking sheet if you don’t have a roasting pan.
- Mix all herbs and seasonings together. (thyme, rosemary, Italian seasoning, salt and pepper, and lemon zest)
- Rub half of the butter and chopped garlic under the skin and half on top all over the chicken. Then rub the seasoning mixture under the skin and on top as well. Squeeze half the lemon on top of chicken.
- Stuff the rest of the lemon inside the chicken along with 2 garlic cloves and a few thyme sprigs.
- Bake for 20 minutes at 400 degrees (to get a crispy skin) and then reduce temp to 350 and cook for an additional hour. Remove from oven and let rest.
